The Negroni is a cocktail obtained by mixing equal parts of bitter, sweet vermouth and dry gin:
- The Bitter used is a 21% vol red bitter where the sweet notes of sugar and orange peel are well balanced by the bitter hints of gentian root and cinchona calissaya bark, to which it partly owes its red colour.
- The Vermouth used is a sweet vermouth at 16% vol therefore with a high sugar concentration, characterised by warm notes of honey and dried fruit (derived from oxidation processes) and hints of balsamic from mugwort and sage leaves, in addition to the many herbs including centaury, southernwood, yarrow which give it an important structure.
- The Dry Gin used is a very dry 40% Dry where the balsamic notes of Balkan juniper overwhelm those of other botanicals such as angelica roots, coriander and iris.
